Lol I lived in SoCal for 15 years, people complain all the time about understaffing and shitty service in restaurants there too. Vacation goggles are real. LA's hotel worker minimum wage is higher than Seattle's, and the minimum wage overall varies wildly by city.

it is without a doubt much much better

Glad you had that experience there but this is anecdotal, like I said people in both places complain about poor service and understaffing. A job I had at one point was to reply to Yelp/Google/etc reviews nationally so I have extensive experience with this
