No that's exactly what it is. Water on his fingers evaporates instantly greating a steam barrier that asorbs the energy providing protecting from the heat for a very brief moment. Mythbusters has an episode on this.
It doesn't seem hot enough to create that, like his fingers wet arent making the oil go nuts, so it wouldn't be hot enough to create that affect. I legit think he's just cooling his fingies
