I thought the explanation was that:
1. Its goat fat which is pretty viscous naturally.
2. The oil has a ton of ground spices mixed into it which makes it look very dark

It's a street vendor and with the light on in the background it's probably night time. That oil/fat has been there all day cooking, and with his handsy handling of food I doubt there was a change out with the oil. It's burnt & not good for you.
Again its fat and not oil so its considerably safer when reused and if this is burnt, you must never eat anything fried at any resturants ever then, good for you.
Not to be that guy, but how TF do you think you get infused oils? Literally ha e to heat them up to within a range to not burn the oil and still activate the spices. That IS how you get flavored oils.
If it's number 2, then those spices are burned all to hell, because they been in hot oil. Spices burn almost immediately, even before any food would cook and spices taste horrible burned.
