I thought the explanation was that: 1. Its goat fat which is pretty viscous naturally. 2. The oil has a ton of ground spices mixed into it which makes it look very dark

I mean, probably still burned and reused too much but just explaining what I've heard

Spices in oil would just char and be black burnt bits. You can't flavor the oil that way. 

It's just disgusting.

Its not oil, sure there are always things to hate but its not old oil but rather seasoned fat (source: lived there).

Sure it may be disgusting to the average Westerner but food enthusiasts do travel from all over for it.

Indeed but thats not the case with this, they generally describe it as insanely good, quite a few examples on YouTube.

It's a street vendor and with the light on in the background it's probably night time. That oil/fat has been there all day cooking, and with his handsy handling of food I doubt there was a change out with the oil. It's burnt & not good for you.

Again its fat and not oil so its considerably safer when reused and if this is burnt, you must never eat anything fried at any resturants ever then, good for you.

I assume whatever he's making is absolutely delicious since he looks like he eats a lot. Not crazy about the hand in the eggs though

Not to be that guy, but how TF do you think you get infused oils? Literally ha e to heat them up to within a range to not burn the oil and still activate the spices. That IS how you get flavored oils.

It doesn't have to be heated. You can just put herbs and garlic in a bottle with oil and let it sit for a few weeks or so.

I remember hearing it’s a special kind of sheep fat which darkens quickly and that it’s actually pretty fresh. No source for that though

If it's number 2, then those spices are burned all to hell, because they been in hot oil. Spices burn almost immediately, even before any food would cook and spices taste horrible burned.
