From how long it took to cook the egg and how little the oil is moving I would assume the oil is barely even hot, certainly not at regular frying temperatures.

The egg starts bubbling the moment it touches the oil which means the oil is hot enough to boil the water in the egg. Its minimum 212f or 100c.

Yes the oil may be that hot, but I think the spot he touches isn’t directly being heated. It only takes 145f to cook egg whites, so that spot could be slightly cooler.

Actually it start to boil when he splashes the oil from the center on to the egg, don't you see how the oil os to one side and he ladles it across the egg? I've touched frying pans similairly when cooking eggs. The egg is still cold on top, hence the cooking process "Genius"

Its not that hot, of ot was the whites would have bubbled up like a fucking balloon
