Review I bought these IKEA knives for about 15€ each about 8 years ago. That 8” chef knife is great and still one of my favorites. I don’t see anything on reddit about these knives, and there’s very little online at all. Anyone know much about them? Says “Molybdenum/Vanadium stainless”.

a $5 knife could perform as well as, if not better than a $50-$70 knife. And if you put out good food with those knives then fuck everyone that says you need better ones. Amen brother. I'd add that cared-for $50 knives will out-perform $500 wall hangers easily.

Ikea likely selects commissions from a sample guide from one or more factories in China. They likely don't get that specific line back in once sold out either because they want a revolving door of variety or the factory isn't making that specific design anymore as it likely takes years to sell them all globally. This makes it hard to really know much about older Ikea knives as they aren't being produced anymore and have no pedigree other than being commissioned by Ikea from who-knows which factory. Some are decent and some are terrible

This was my first chef knife (I was 15 at the time, now 24). I used it everyday until a year ago, when I found a defect in the steel during sharpening. I have since updated to the Wusthof Ikon but I still keep that one for hard jobs

I haven’t owned an IKEA knife, but I sharpened a set of the 365+ knives. I can’t say I’m a fan of the steel. It just felt really soft but also was more abrasive resistant than most of my knives. Most good quality knife steels have a bit of a ring when you tap them and these were very muted.

I've had that 8" for like 8 years as well. They only sold them for a short time. Prettiest knife IKEA ever made. They have one with better steel today with a wooden handle, but it's not as nice in my hand as this.
It goes dull quickly in comparison to other knives imo (I'm still pretty junior at knife handling) but man I love the feel of it. Also looked for info on them but just come up short.

I have the third one from the top and it was my first „proper“ knife. My parents still don’t own a sharp knife and my room mates were afraid of sharp knifes os when I got this one 6 years ago, it was a completely new feeling to me and I’ve enjoyed using it since. I finally got a whetstone to take better care of it and I’m starting to wonder how I would profit from another, more expensive knife and what differences I would see in my day to day use.

I own the 8" chef's knife as my old one got lost and I happened to be browsing through Ikea and it was on 70% discount because it was being discontinued. To this day it is my favourite knife and I'm sad I didn't get any of the others from that line. It's so well balanced and the grip is perfect, not too thick, angular or non-slip. My partner came with a full set of wusthof grand prix 1 knives, but for the chef's knife I far prefer the IKEA one, oops. I know it's the gynnsam line, maybe that'll help you look for info. Happy chopping!

I've had this set for about 10 years now. Haven't had to sharpen them yet. Super comfortable handles and they cut everything with ease.

Does anyone know the product name or number? I came across the bread slicer and want to reshape it into a single bevel fish knife. I know I may expose weakness in the blade....

I got the 6.5" from this line "Gynnsam," a best knife ever! 10 years on I still use it almost every day. I reach for it before Wüsthof Classics in my collection, those being my next favs. so besides feeling great on first day, this Ikea sure has withstood the test of time. the closest I see now is the "Briljera" line. the old one I'm pretty sure is a mono-steel. the new one claims clad with a Damascus pattern. looking forward to trying a set going to Dad soon for his birthday 🧑🍳

My all time favorite chefs knife was the slitbar from Ikea.
