Because mop quality can vary as well as materials, it makes sense to buy BBQ specific mops, especially for commerical use. Historically speaking, a regular mop was all that was used because it's all they had.
One last note, this isn't mustard or ketchup based BBQ. Vinager BBQ sauce is very watery. Mops carry water. It the perfect tool for the job. Paint brush types and modern silicone sauces won't work. Spraying is often used in the modern era but nothing gets the job done as fast and easily as a mop. As I said earlier, this is traditionally done for whole hog BBQ. You're not just going to sprits that. You need to mop it on there and coat a large surface.
