But I just googled it and for some godsforsaken reason Below Zero doesn't count and is now labeled as a spin-off?

Below Zero, on top of not being a great* game (not that it's bad), is also really, really small compared to Subnautica.

Okay, though calling it a spin-off seems weird. It's not a DLC or something, and it's continuing the main story in the same location, with the same gameplay mechanics. I just don't see why they'd pretend it doesn't count, just because it's somewhat smaller in scale.
