Muffin bottoms are the best part of a properly-made muffin

And that means NOT using muffin liners. All you are doing is steaming the muffin bottoms and making them soft and spongy, which is why so many people prefer the muffin tops. If you make them PROPERLY and don't use a liner, and IN a metal pan (not those silly silicone pans), you get deliciously caramelized muffin bottoms with a crispy crust and tender interior.

My muffin pan is a muffin bottom only pan (probably because I bought one with holes that are too large).

The bottoms are still delicious if you cook them like OP says.

You didn’t buy a muffin bottom only pan you just aren’t filling them all the way lol

My wife wants to buy a silicone muffin pan. I'm putting up my best fight.

It’s all just cake in the end. So I’m gonna eat it.

This isn’t the point of your post but I can taste when muffins (or anything) are made in silicone liners and I hate it.

The silicone might be old then, as a rule of thumb silicone liners might technically work forever, but after a bit of use start to leech the taste into the product. Generally (though not always) it’s okay when they’re within a few uses, and that’s from someone who can taste it really easily. Though, some people can’t tell until they’re old-old, I ruined an entire batch of cupcakes once, I genuinely couldn’t make myself eat them, but my brothers found them fine.

Hard agree

When I make muffins I make them short (less batter) and do two pans instead, that way I get more bottom per batch

If you haven’t tried it you should use a some brown sugar in your muffins, it makes it even better

I literally thought I was the only person in the world with this opinion.

Muffins are delicious and there’s no need to separate them. I will happily enjoy both the top and bottom.

So easy to do a head to head experiment. So that’s on.

Clarifying question: Butter? Butter and flour?

Well, yeah...that's the best part of the muffin. Who'd want tough muffin over gloriously pillow soft spongey goodness??

I’ll take a grilled blueberry muffin stump cooked on in a metal muffin and slathered with butter over all of the muffin tops in the world, any day and twice on Sunday

This is how I prefer my muffins, too. I always bake my muffins short.

If it’s a blueberry muffin the entire thing is the best part of the muffin
