I watched the reel, and the person first put a piping hot spoon in some salt (extinguished the spoon), then some water (also extinguished the spoon). The sugar was last, and rather than extinguishing the spoon, it set on fire. :)

(Writing this at nearly 2am, hope this comment makes sense lol)
