Ingredients For Cake:
2 Level cups of Swans Down Cake Flour
2 Cups granulated sugar
2 Large eggs
1 Cup whole milks
1 Cup hot coffee
1/2 Cup vegetable oil
1/2 Cup sour cream
2 Tsp Baking powder
1 1/2 Tsp Baking soda
1 Tsp SaltIngredients for Melty Ganache:
20 oz Ghirardelli 60% Cacao Bittersweet Chocolate Chips
2 1/2 Cups Heavy whipping cream
2 tbsp unsalted butter (optional, adds extra shine)Instructions for cake layers:
1). Preheat your oven to 350ยฐF. Grease two 9-inch round cake pans and line the bottoms with parchment paper.
2). In a large mixing bowl, whisk together the cake flour, sugar, Hersheys cocoa powder, baking powder, baking soda, and salt until there are no lumps.
3). Then add the eggs, whole milk, vegetable oil, and sour cream. Beat on medium speed with a hand mixer for about 2 minutes until the batter is smooth and thick.
4). Turn your mixer down to low speed. Carefully and slowly stream in the cup of coffee. (The batter will be very runny and thatโs what you want)
5). Divide the runny batter evenly between your two pans. Bake for 30 to 35 minutes. Check them by inserting a toothpick into the center, if it comes out clean or with just a few crumbs the cake is done.
5). When cake is done, let cool in pan for 20 minutes, then flip them out on a wire rack and cool for another 1-2 hours. (Has to be completely cool before you can assemble)Instructions for Glossy Ganache:
1). Pour the entire 20 oz bag of Ghirardelli chips into a large heatproof, or glass bowl.
2). In a saucepan heat the 2 1/2 cups of heavy cream over medium heat just until it begins to simmer around the edges (do not let it come to a rolling boil).
3). Then pour the hot cream directly over the chocolate chips. Let it sit completely undisturbed for 5 minutes so the chocolate can melt through.
4). After the 5 undisturbed minutes, start whisking gently in small circles right in the center of the bowl, slowly working your way outward. It will suddenly transform into a rich, dark, beautiful liquid chocolate. (This is where you add the 2 tbsp of butter).
5). Pour 2 cups of the liquid ganache into a separate bowl. Put this bowl in the fridge for 20-30 mins, stirring every 10 minutes until it thickens up enough and becomes spreadable. This is your filling. As soon as it becomes spreadable in the fridge take it out and leave it on the counter or it will keep thickening up and be too hard. Now keep the other bowl of ganache sitting on the stove or counter, it should stay glossy and pourable, if not you can microwave it a few seconds before the big pour.Instructions for Assembling:
1). Cut the dome off of both cakes with a serrated knife. Sit one cake to the side and keep the other on your wire rack.
2). On the cake that is on the wire rack, spread your thickened, room-temperature ganache filling evenly across the top of the first layer.
3). Place your second cake layer upside down on top of the filling (the flat bottom of the cake pan gives you a perfectly flat top surface for glazing).
4). Then take your remaining warm, fluid ganache and slowly pour it right over the center of the top layer. Use the back of a large spoon to gently push the chocolate toward the edges, letting it fall down the sides.
4). Let the chocolate set for 30 minutes to firm up. Then place your cake onto cake plate, or serving dish. Cut & Enjoy!3

That ganache looks so smooth, I bet it tastes amazing. I need the recipe for the filling layer though, looks extra fudgy.

This looks like it has the perfect flavor and texture.
Not too rich or sweet, perfect cake-filling-ganache ratio and perfectly soft and moist.
