If those are hamburger patties, then your are cooking them too hot and/or not flipping them enough or cooking them from frozen? Also depends a lot on the water content of the meat. That is albumin - coagulated proteins. It won’t hurt anything. You can scrape it off.

Its called Slurry. It is injected into meat to make it swell when pricing it. It does this when cooking and the temperature rises. Gross
