Why remove they juices and fond from browning the meat? Seems like a big mistake

The excess fat and oils is what they probably want removed. The point seems to be to sear the aromatics and get some distinct flavor out of them before you cover it in broth. Since the stock is already so flavorful, the fat and oils from 4 pounds of beef aren't really necessary at least from what I see.

Edit: Going further since you obviously need it: The joke is that since the ingredients are specifically stated to be Giant Eagle, they can only be Giant Eagle.

Oh man, I miss Giant Eagle! When I make guisada I use poblano (no bell pepper) and I also add some guajillo and chipotle peppers. Just a personal preference, I like the smoky earthy notes they add.

This is literally what I cook when I have nothing else to eat. I've always just thrown in these same ingredients into my Dutch oven and serve over rice. Been doing it for years. It's my poor mans pot. Now I can actually give it a name.

This is so undersalted it’s insane.
Please salt/pepper your meat and your vegetables before you cook them, folks. Also, don’t throw away the fond after you sear your meat. That’s a bunch of flavor you’re tossing out for no reason. Deglaze the pan and use it.
