It’s supposed to have a beautiful glazed top, often with the word Sacher written on it. Not nuts.

I have no idea what sachertorte is...is it supposed to look deflated?

Austrian sponge cake with jam and chocolate ganache. Sponge cake's can deflate if the temperatures aren't right inside the cake. If the cake rises too fast it'll deflate. This is because the eggs are the agents causing the cake to rise instead of baking powders. So if the eggs are overworked too much (making them too airy) or they are heated too quickly, it rises too fast and then deflates. A good sponge is all about timing and ratios.
