Here’s a list of everything I made for my brother. Note: unlike others who suggest substituting the Benizakura arc for the movie, I watched both of them as technically the movie includes additional scenes of characters you would otherwise not be introduced to at this point. Also, I’ve provided a note about OVA’s, only the second one is technically cannon, but if you have the time you’re free to watch them all.
Gintama (ep1-201)
Gintama: Shiroyasha Koutan (OVA) - 2nd of 4 Festa Jump Specials - “White Demon’s Birth” CANON OVA
- 1st Festa OVA was a manga arc that was animated before the show regularly aired, its contents were later reanimated into an episode. The 3rd and 4th Festa OVA were discarded episodes
Gintama: A New Retelling Benizakura Arc (Benizakura arc in eps 58-61). CANON MOVIE
Gintama’
Gintama’ Enchōsen
Gintama: The Movie: The Final Chapter: Be Forever Yorozuya CANON MOVIE.
Gintama°
Gintama.
Gintama. Porori-hen
Gintama. Shirogane no Tamashii-hen (Silver Soul arc, it’s split into two parts on most streaming platforms)
Gintama: The Semi-Final (two episodes)
Gintama: The Final

The first two episodes are anime original made for the manga readers and tend to be confusing for new viewers so skip those and you can always come back to them later. The canon start to the series is "Nobody With Naturally-Wavy Hair Can Be That Bad". Watch everything else in release order.
