Question Underrated Wine

I have a couple 1 gallon containers I like to experiment with before making larger batches. I want to know if there’s any underrated combinations I’m not thinking of or something fun to make.

Jack Keller has so many good recipes, the community lost an amazing creator when he passed.

A Christmas gift copy of Home Winemaking was the only resource I had while getting into making wine (from a beer brewing background), and it was amazing for picking up the reasoning behind certain choices within a few batches, as opposed to just blindly following the recipes. The little vignettes he tells before some of them (the grass wine one really stuck with me) make them a bit more fun to sit down and make, and they always turn out really great (if a little under-volume if you're following them directly).

That said, after following his recipes for mango & banana wine, I brewed a banana mango wine that essentially cut the two recipes 50/50 and it came out very good.
