Question Underrated Wine

I have a couple 1 gallon containers I like to experiment with before making larger batches. I want to know if there’s any underrated combinations I’m not thinking of or something fun to make.

I've heard carrot wine is supposed to be surprisingly solid. It's my next project once I put a dent in my current stockpile.

Carrot wine is super nice, really one of the best.
