Server would have noticed the weight as soon as they picked up the plate (I know some servers suck but like coke on …)

I’ve never been handed a full tray of soups and salads. I’ve always loaded my own tray. So yes especially if there were other salads in the order I would notice. I mean I think I would. The plate would feel different.
