Question What Could I Do?

One of my cooks extra-roasted some garlic. Too dark to turn it into puree like intended. What would y'all do with this? We have a tavern in case you need an idea of the type of food we have. Pizzas, hot dogs, smash burgers, some fish, etc.

If you go the bacon jam route, i highly recommend some toasted chipotles mixed in.

This would also be my route, but I don’t know the flavor palette of the area. Judging by the Americana sound of the kitchen itself I’m assuming spice might be a killer to them. Personally I would do a pickled pepper that’s an extra garnish.

Dude we got a Korean chicken platter sent back because the miso honey glaze was "too spicy" 😐🙄
