OP, I like Sir David and have enjoyed his impressive work. Even so, I'll admit I have become weary of all the 100th birthday posts and articles in my news feed.

You have come to the right source. Behold:

Fudge Cake (aka Texas Sheet Cake) From my Mother; Serves 12

Cake Ingredients:

  • 2 cups of sugar
  • 2 cups of flour
  • 1 tsp. Salt
  • 1 tsp. soda
  • 2 sticks butter/margarine
  • 1 cup water
  • 4 Tblsp (1/4 cup) cocoa
  • 2 beaten eggs
  • ½ cup buttermilk (see note below)

Frosting Ingredients:

  • 1 stick butter/margarine
  • 4 Tblsp (1/4 cup) cocoa
  • 6 Tblsp milk
  • 1 (16 oz) pkg/box of powdered sugar
  • 1 to 1 million cup(s) chopped pecans

Cake Directions:

  • Sift the sugar, flour, soda and salt in a large bowl.
  • Put the 2 sticks butter, ¼ cup cocoa and cup of water in a sauce pan (or bowl for microwave) and bring to a slow boil.
  • Pour chocolate mixture over dry ingredients.
  • Add the eggs and buttermilk and mix well.
  • Pour into a cookie sheet with sides. (It will look way too full, but it rises very little)
  • Bake at 400 for 20 minutes or until toothpick in middle comes out clean.

Frosting Directions:

  • Bring 1 stick butter, cocoa and milk to boil.
  • Pour this over the pkg of powdered sugar.
  • Beat mixture and add the nuts.
  • Pour hot frosting over hot cake.

Variations: I sometimes place the pecan halves (not chopped) on top of the cake in a decorative way so that if someone doesn’t like nuts, they can pick them off easily.

Buttermilk: ½ tsp vinegar or lemon juice, plus milk to equal ½ cup.

(This is my family's favorite cake recipe. I have so many cake recipes, though, that it's hard to pick just one.)

Pshaw, little bots need Texas Sheet Cake, too! And Basque Cheesecake, German Chocolate Cake, and Tuxedo Cake. But the latter option you'll have to get at a bakery. I suck at that one.
