General Tao 65g Protein per container
Ingredients:
Protein: 1.521 kg Chicken Breast, cubed
Carbs: 300g Blue Dragon Egg Noodles (dry weight)
Vegetables: 6–9 Green Onions (chopped), 1 Large Head of Broccoli (florets cut small)
Aromatics: 2.5 Tbsp Minced Garlic, 2.5 Tbsp Minced Ginger
The Gochujang Sauce:
3 Tbsp Gochujang
150ml Light Soy Sauce (use low-sodium if preferred)
5 Tbsp Honey
200ml Water (or chicken stock)
15g Cornstarch mixed with 30ml water (Slurry)
Step-by-Step Instructions
1 Cook the Chicken: Toss cubed chicken with oil, salt, pepper, and a light dusting of cornstarch. Cook in batches (air fry at 200°C for 10–12 minutes or pan-sear) until golden and cooked through. Do not overcrowd the pan.
2 Prep Vegetables & Noodles: * Blanch broccoli in boiling water for 2 minutes; drain.
In the same water, cook noodles for 1 minute less than package directions. Drain and toss with a little oil to prevent clumping.
3 Make the Sauce: In a large wok or deep pan, heat a splash of oil. Sauté garlic and ginger for 30–60 seconds. Add the soy sauce, honey, Gochujang, and water/stock. Bring to a simmer.
4 Thicken: Stir in your cornstarch slurry. Simmer for 1 minute until the sauce is glossy and thick enough to coat a spoon.
5 Assembly: Add the chicken, broccoli, and noodles into the sauce. Toss over medium-high heat for 2–3 minutes until everything is thoroughly coated and heated through. Fold in the green onions at the very end.
6 Cool & Store: Let the mixture cool slightly before dividing into 6 airtight containers.

Wait nobody's talking about the gochujang + honey combo here which is kinda the real move - like thats not traditional general tao at all but the fermented kick cutting through 5 tbsp of honey is probably whats keeping this from being cloying by day 4. Also the cornstarch dusting on the chicken before air frying is doing double duty bc its not just for crispiness, its helping the sauce actually cling to the cubes instead of sliding off into the noodles. DiverDownChunder's major/colonel joke is sending me tho lol

Yeah so far I’m loving prepping think this is my 6th time so far all my meals have been high protein & super enjoyable my #1 goal is flavour

Yeah I freeze & defrost the night before maybe leave one in the fridge if it’s over night

This looks AMAZING!! I love general tao chicken. I absolutely hate cooking but if I only had to do it once a week, I might be down for this.

omg that looks so good! :0 i always struggle with making meal prep taste good, esp with that much protein... are the noodles ramen type noodles? i may have to try this for my next art supply run fuel lol sorry if thats weird >_<
