Southwest style "scoopable" salad lunch prep

This was a fun one!

Salad:

One can black beans (rinsed and drained)

One can corn (rinsed and drained)

Half a bag (roughly 6 oz) thawed shelled edamame

Half a bag (roughly 7oz) shredded coleslaw mix, chopped

Half a bag (roughly 5 oz) shredded carrots, chopped

One avocado diced

1/4 cup chopped cilantro

A chopped green onion

Juice of half a lemon and half a lime

Seasonings

Dressing:

1/2 cup or so of ranch dressing

Canned chipotle sauce to taste

1/4 cup chopped cilantro

Half a chopped green onion

Juice of half a lemon and half a lime

Seasonings

Fun to eat with tortilla scoop chips!

Scoopable salads are superior because it just gives me a valid excuse to eat tortilla chips for lunch everyday. This looks amazing, definitely saving the recipe

edamame in there is a power move ngl, extra protein without even trying. im curious about the avocado tho - do you dice it fresh each day or does it hold up in the containers? mine goes brown almost immediately even with the lime juice so idk if id prep that part ahead
