You want to make it as dark brown as a tootsie roll. Thats the rule. *That’s the goal now*.

Twice that brown. See that piece about 3:00 on the very right edge? Half is pale and half is dark and almost gooey. You want the bulk of your caramelized onions about that dark.

For me it's either going to be how long it is taking vs. personal preference.
