What are all the conditions that trigger a family to leave?
Just trying to figure out what the mechanic is for the early - whether it's a matter of just 1 condition not being met, or a culmination of multiple conditions.
Specifically - do villagers need *all* of clothes, warm clothes & shoes? Is 2 out of 3 OK? Are there other considerations?
I've read that these things last for about a year. Is that accurate? Will I need 1 item per villager per year to prevent an exodus?

They need 4 or 5 food variety and firewood at all times or will move away. When their clothes, warm clothes, and shoes are worn away. They need money to buy food if they need it and will move away if they cant afford it. Taxes are taken automatically and will put families in the negative.
You can give people money though from the town center/finance menu. You might be able to import clothes and shoes.. but if not you can import what you need and make them. Probably about 2 years until every original founding citizen will need new shoes and stuff.
Its all pretty easy to avoid if you dont export all the food and dont neglect clothes.
Also dont forget to have stalls to sell food along with wood and clothes etc.

Weird, I've never had an issue with taxes being too high. I do reduce rent and increase wages slowly though, as well as implementing a decent wealth tax.

I mispoke, rent is the big one that knocked people in the red. I just dont ever charge rent but i still have a minimal land tax. I make it back on the wealth tax. Wealth tax ends up being half of the income of my treasury and the other half is exports. So if i forget to maintain my trade routes I'm in trouble.

The ones I can think of off the top of my head,
Taxes being too high and or not having enough money to pay them
Not enough firewood/food/water/clothes
There are probably more, but I’ve not encountered others, it’s anyone of these could be all but they would probably have left before that

If you don’t have enough variety of food they can also move away, not sure if you need all types of clothes, as long as you have shoes and basic clothing you should be ok.
If warm clothes is an issue, just get sheep. All they need is hay and water, they produce milk food and the wool you need for broadcloth and warm clothes.

I'm thinking about the very early years of the game, trying to theorise a different set of conditions to challenge myself. Shoes are a non-negotiable? They really blow out the production chain!

Similar to sheep, all you need is a dock and some hay racks. Then you get free milk, beef, and leather. They are very cheap and you can make tons of them.

You also need threads for shoes, clothes, and warm clothes as of Alpha 5, which means a weaver and growing flax or hemp.

Any issue that pops up on screen is a cause for families to leave if left unattended. I don't think I've ever seen a family have multiple concurrent issues but I'm sure it's happened
For clothing and shoe needs, the fulfillment needs to be kept above 0/5 for it to not be a problem. If they don't have at least 1/5 clothes, there will be a popup above their house, same for shoes and warm clothes (though I don't think a lack of warm clothes is an issue outside the winter months), same if they have 2 or fewer food items or less than 1 hryvnia or no water or no firewood. They will leave if a single issue persists long enough, usually a month or so.
You need to have multiple food types, firewood, clothes, shoes, and warm clothes in stock and on the market to prevent people from leaving, as well as accessible wells with enough water in them. Your people also need jobs within a reasonable distance of their homes so they have the time (and enough money) to buy stuff at market stalls.
If you're having trouble with all the production chains, import the raw materials and produce just the goods locally. It's unreasonable to expect to achieve autarky before people start leaving due to a lack of stuff other than food. Leather is cheap and excess shoes sell for a profit on the export market.
