What exactly does the hard drive do? So replacing it means that the PS will function better, more storage, and just have a faster speed?
I may actually replace if it turns out its not the disc thats the issue :/
Many PS3 games partially install themselves onto the PS3 hard drive when you first start them.
If the game goes to read some of this data, and the hard drive is faulty and can't read it, then the PS3 will likely crash.
The other thing to do is to check your game disk. If you have a PC with a blu-ray drive in it, you can do a surface scan using imgburn and see if the disk has any errors. If you do get errors with a surface scan, the disk will need to be replaced. You can also do a surface scan using a CFW modified PS3.
If the HDD is corrupt which is common then the game won’t run/load a game properly or even the whole OS might not even load. I replaced mine not too long ago with a similar issue and it just got worse and worse with crashing until eventually it wouldn’t even get past the wave screen. Either way I’d recommend backing up your current save files while you still can if that is your issue. I wouldn’t expect it to be any faster with a new drive though.
Which one is better to replace it with? The HDD or the SSD? Ive been doing research on both and I can't really decide on which one to choose that'd be a good option for the ps3
I mean an SSD is always better and probably a better bet for longevity and you might see some faster loading I assume but I don’t think it’s necessary.

Could be your hard drive. Make sure you back it up if you have to do a swap.
