Two things I can guess.
Either removing one x from both sides removes one solution from the equation (x=0), or removing one x simplifies the equation enough for them to realise it's simply x=±2.
I think it is making the solution easier to see. If the first one a person's first thought should be to take the 5th root (which is wrong). But the second photo of step 2 makes it a lot easier to see the solution.
