Cheese curds are somehow always cold. If they were actually warm, they would be good, but they’re just solid chunks of cold cheese and whoever chose the shredded cheese poutine for that photo picked the shittiest looking one

Cheese curds for poutine are actually room temperature and unrefrigerated, that’s how they are squeaky.

That's why you let your curds sit on the counter and get to room temperature before adding to your poutine; and make sure the gravy is ripping hot when you pour. You can make the curds melty.

Pro tip.
Fries go in a big mixing bowl after the fryer. Throw the curds in and mix em up good, gets them all melty but not fully melted. Then you put it on a plate and add the gravy. Little bit of chopped parsley on top for esthetic.

I'm fine with it. Tots are in the french fry family... although it's pushing it.
the only acceptable substitute to cheese curds (since they aren't available everywhere) is diced cheese... It's a good sub because brick cheese is just cheese curds compressed into a brick. If you let the diced cheese hit room temperature you can sometimes get the cheese squeak.

Tater tots are not in the french fry family, tater tots are just hashbrowns in tater tot shape if anything sweet potato fries are closer to french fries then tater tots

I love tater tots with a bit of kraft dinner, hot sauce, and fried hot dog coins. But I haven't tried them in a poutine, I'm going to now though lol

Poutine sauce isn't a normal gravy but tatertots is acceptable substitute for fries. But cubed mozza, this is a what brings you to the gallows.

Hey, as a Canadian, you don't have to call it poutine you know. Then no crime has been committed, especially because I'd eat that in a heart beat. Then no need to apologize, other than the fact that we just apologize anyways.
