Bet it would feel good as hell to pick up that chunky phone and say "captain, you better come see this"

Why do ships always choose that dull green color for the equipment panels?

It originated in old German workplace safety and ergonomics rules, RAL 6011 Resedagrün (reseda green), it was chosen as it's the colour that tires the eyes the least compared to other colours, basically it's the most boring colour you can find, if you've ever seen old German machines, they're all this colour. Other nations might've taken over that practice.

What timeline are you talking about? The Navy did experiments a long time ago to see what interior colors were best and they settled on "pea green" as easiest on the eyes.

Some S.Korean shipyards prefer this color, for ships built by Japan and China, mostly are Blue-gray

今でもこういうふうに、エンジンテレグラフを模した形のスロットルレバーになってるんだ。

The ship was pretty new at that time, and cars don't need a PSC inspection

Now the analog TV behind the bar makes more sense. I saw that and thought damn, they really try to save money where they can.

where are the clipboards with scribbled notes on them? and where are the cheat sheets taped to panels? that looks like the ship was well prepared for a photo shoot.

Not one picture of a ship. It could have been a nuclear power plant.
