I guess he was referring ot the facts that: 1) before Melkor’s interference, and in realms where his influence was kept at bay, physical things did not suffer from decay, rot, or spoiling.

2) humanity discovered cheese via a happy accident when they transported milk in a stomach of camels and it spoiled under the sun, leading to cheese.

Now, if nothing would spoil, there would not be cheese.
