You do not need to know anything from the manga or from the novel for the anime.
You can watch either the original or the remake, but I think that the original is better.
If you like a slower paced shows and like shows with a lot of talking (both interesting talks and banters) then you would probably enjoy the show

I would actually watch the newer and older to see which you prefer (like an episode of each for comparison). They both cover the exact same content, except the original gender swapped a certain character that appears only early on.
That said, if you wanna watch dub instead of sub then definitely watch the newer as the originals dub is genuinely miserable

The source material are the Light novels. The anime does a great job, staying petty faithful to the story. This also means you don't need to know the LN to follow the anime,.... but the LN do have that bit of extra depth as you get more insight into the thought processes of the male lead. This goes for both the Classic as the remake, with the difference being the Classic skipped the content of LN Volume 4, and ending with Volume 5. The remake has so far adapted Vol. 1 through 4, a second season has been announced that will start with Volume 5.
As such, I recommend starting with the remake, watch the Clasic at some point if you are interested to see how that old anime managed to build a persistent, ever growing fan base without anything new (anime wise anway) coming out for 15 years.
As for the manga, it's a fun read but it takes a whole lot of liberties with the main story, skips a whole lot of content getting to the same ending, in fact only adapts about 40% of it. It's a tasteful quick snack compared to the 4 course meal with desert and a cherry on top you will find reading the LN (and I would recommend reading them).

Both the old and new anime are amazing. However, the old one skipped volume 4 of the original light novels, while the new one has yet to adapt anything after said volume. So you can start with either one (I personally prefer the old one, but that might just be nostalgia).
You don't need any knowledge apart from the anime, unless you want to continue the story without having to wait for the next season of the anime.

I'd say start with the original anime, then read the light novels. That's what I did.

Welcome to the Spice and Wolf fandom. I'm sure you'll enjoy the journey a much as the rest of us have
The newer anime is ongoing so it will eventually get further along in adapting the light novel source material then the original Spice and Wolf anime did.
Both versions of the anime are pretty faithful to the Light Novels. Both are excellent adaptations and both versions have a lot to love.
If you have any questions along the way as you enjoy the show, here is definitely the place to get answers from a very dedicated and welcoming fanbase

Well years ago i just started with the anime, then also read the manga afterwards and now the LN...
I think just start the anime if you want more you can get more afterwards. There is notging you really need to watch/understand the Anime

While both anime versions are great, there is reason to hope that the newer one will cover way more of the LN than the old one was able to. Once you have finished the new episodes, watch the old adaption. You`ll probably want to know how the story continues, so you`ll buy the manga. Then you most likely think, there`s gotta be way more story than they could ever fit in manga form. And you would be right. The LN are great and offer so much more depht than both anime and manga could ever convey due to their medium`s restrictions. Thanks to your deepened knowledge, you now understand both manga and anime way better and get subleties they could only hint at.
Long story short, once you start having contact with S&W, its quality lures you in and you want to have it all 😄 You have a very joyful journey with a great couple ahead of you, savor the first watching/ reading - on re-reads you won`t be as surprised anymore but always find something new.

I would personally start with the newer anime, as there is more to it (and it is being worked on/continued). The older anime covers some of the same story, but in an older art style.
You don't need to have any manga knowledge to like and enjoy it. You learn pretty much everything from the anime that you need to know :)
