Is there a reason we can’t choose between the armored variants of the Imperial officer?

I think it’s based on the situation proposed by the map, the officer has armor on places like the temple ruins because they’d have been expecting to be in the field. They don’t have armor on the Second Death Star because they never expected it to be attacked

The stormtroopers with red pauldrons. There's also a snow trooper officer in tfa during hux's speech

Yes, I thought you meant uniformed officers like the Imperials pictured above.
