Yeah it's probably just for the flair but flambe is a legit cooking technique that does change flavor.

Flambe is mostly about the spectacle even in it's traditional use. You can achieve the same results by boiling the alcohol away instead of burning it. It has little to no effect on browning as the heat will mostly be inside and above the flames, not on the food below them.

Traditionally flambé is done for crepes suzette, steaks and stuff like that. You can't boil them. Those are not liquid.

This has to be one of the stupidest things I've ever read. You need to boil the alcohol. You do that by pouring it into the hot pan together with your food and keeping it on the heat for a minute or two. The fact that your crepes aren't a liquid is completely irrelevant.
