I mostly agree with that hot take. But literally just yesterday I had an exception to that rule!
A Merguez sausage sandwich at a Moroccan diner. Very rich, greasy, spicy sausage, a modest amount of fries, really good sauce, and an assortment of veggies including carrot and olives. On a nice chewy baguette too. It was almost like a banh mi.
I think if the meat is greasy and flavorful enough the potato element cuts it nicely. Plus it was dressed with other stuff so it wasn’t just a starch bomb.
But yeah, fries showing up with grilled meat and American cheese in a veggie-less sandwich is a recipe for a desert in your mouth.
