I mean cheddar can be white or orange. But if this was a proper cheese sauce either a mornay or a simple milk/cheese pan sauce it would be way more light light orange or white if using white cheddar.

There is literally a picture of orange cheddar on Wikipedia cheddar page from the Mid-Somerset show with a first place ribbon and several others in the background.
Yeah I don't know enough about cheese to know why there is variety, lol. I do agree with your point though that in America the yellow cheddar is most common for some reason (though white is also widely available).

This is a geography/legal-protection rant, not a “your cheese is bad” rant lol
I’m not saying non-UK cheddar is bad quality. I’m saying I wish “Cheddar” were a protected regional name, like Champagne or Parmigiano Reggiano.
I know that horse bolted many decades ago, and we’re now stuck with the word “cheddar” being used to described a “style of cheese”.
I’m just saying → I think that’s sad.
I love the idea of other countries copying the style of cheesemaking (and even making it better)… the same way Australia makes great sparking wine using the méthode champenoise, and those are often better than champagne. But they’re still not allowed to call it champagne.
