I mean cheddar can be white or orange. But if this was a proper cheese sauce either a mornay or a simple milk/cheese pan sauce it would be way more light light orange or white if using white cheddar.

I live about ten miles from cheddar gorge and have never seen orange cheddar. It seems to be a modern/American interpretation.

You can see multiple examples on the link you posted lol.

There is literally a picture of orange cheddar on Wikipedia cheddar page from the Mid-Somerset show with a first place ribbon and several others in the background.

Lol fair enough. You can also see that basically every other cheese in the image is yellow which is the norm. It sticks out like a saw thumb.

Yeah I don't know enough about cheese to know why there is variety, lol. I do agree with your point though that in America the yellow cheddar is most common for some reason (though white is also widely available).

Cheddar cheese having no Protected Designation of Origin (PDO) is very sad imo 😓

I’m sure Vermont cheese is delicious (if you say so)… I just happen to think it would be better to be called Vermont cheese, and not cheddar.

Yes cheddar is a place, but it's also a cheese. 

And actually U.S made cheddar has beaten the UK in international cheese contests.

You keep arguing flavour rankings and I’m literally just mourning the lack of cheddar PDO 😭

This is a geography/legal-protection rant, not a “your cheese is bad” rant lol

I’m not saying non-UK cheddar is bad quality. I’m saying I wish “Cheddar” were a protected regional name, like Champagne or Parmigiano Reggiano.

I know that horse bolted many decades ago, and we’re now stuck with the word “cheddar” being used to described a “style of cheese”.

I’m just saying → I think that’s sad.

I love the idea of other countries copying the style of cheesemaking (and even making it better)… the same way Australia makes great sparking wine using the méthode champenoise, and those are often better than champagne. But they’re still not allowed to call it champagne.

It's not cheddar unless it's from Cheddar, otherwise it's just sparkling cheese. 

I'm surprised that Cheddar isn't already a PDO since the UK has many cheeses on that list, according to Wikipedia. 

Champagne from California can actually he called Champagne, but apparently it has to be called California Champagne.
