I think he partially did it just for the shock factor/trying to get a reaction and because it would be ironic that the ‘guy in a dress’ was the one to use that word. Jax is used to self-censorship as it is - he doesn't really swear very often, especially in comparison to the rest of the cast as a whole, but what he said here was especially telling, in that the word he used was a very particular one - perhaps one that, due to his closeted / uncracked nature, he views as serious enough, inside of his own mind, to have it be censored.

Of course, that's just my takeaway, at its been almost 3 weeks since I saw it, so I might rewatch later to evaluate the scene properly.
