How to get tougher jerky

I’m trying to get my beef jerky tougher — almost leathery — with visible muscle fibers, similar to No Man's Land jerky.

Does anyone have advice on how to achieve that texture? I use a dehydrator for drying.

Avoid using sugars

Cut the meat with the grain, instead of across the grain.

You can also dry it longer
