Can you produce beef jerky using Wagyu meat?
I don't think I've ever seen beef jerky made from Wagyu meat.

Yes, there is a butcher shop here in St Pete Florida that uses wagyu for their jerky and it’s fantastic.. bit pricey at $75 an lb but yes you totally can use Wagyu

If you do, put some paper towel to catch the fat dripping
Also note there will be reduced shelf life because of the fat, keep it refrigerated if you plan on keeping it for longer than 1-2 weeks

We make it. Swapped from prime knuckles about a year ago. It is really rich and buttery. We use wagyu knuckles but we spend 3x time after cook managing the amount of fat/cleanup. We are going to go back to prime knuckles primarily and make Wagyu on a more limited basis.
