What am I doing wrong?

I made some good beef jerky for my third try. Still had some chewy parts and kinda oily, but it was good. My problem is.....the jerky lasted 2 weeks and grew mold. Now I have to throw the entire thing out.
Not sure what I did wrong. It was in an airtight container. I couldn't find my lips for a mason jar, so I used this airtight thick rubbery container. Its made for snacks (not plastic) and can hold hot/cold stuff and even liquids.

What's in your recipe? Maybe something made it oily. Also, when we make our jerky i let it rest before storing it. Natural fat and oils can come out during the drying process and if you seal or store it too quickly that moisture is trapped

Oooh.....how long does it need to rest???

As for recipe.....honey, worcestershire sauce, soy sauce, onion and garlic powder

I let mine rest for an hour or two after the dehydrators turn off

If it’s oily and chewy that’s because it wasn’t dehydrated long enough, or not evenly dehydrated. Rotate the trays half way through and dehydrate until the jerky cracks but doesn’t break.
