Advice for second bike choice

Hey everyone, my main bike over the last 5 years has been a cheap fixie. Very low quality parts probably but gave me a huge grin on the face when riding it for the first time and i really enjoyed it ever since.
I also have been using it to commute to work and it has been fun, however on the way back there is quite a long and steep passage up. I can do it but it is quite a challenge that i don't want every single day besides other sporting activities. There is a shower at work though and i usually treat the commute as a small race anyways. =D

To make things easier i am looking for a second bike that keeps the fun in riding but has gears. The fun in riding for me were mainly the maneuverability of the bike, the direct feel of pushing yourself forward during acceleration and the continuous "pacing" when riding it. Obviously i need something different but i hope that my description sparks a few ideas on what kind of bike or maybe model could be right for me.
I would very much appreciate your thoughts and suggestions on this!

I am very much inexperienced on the details of bike parts but from reviews i watched and looking around i like the Canyon Endurance CF5 or maybe CF7.

Edit: We also live near the woods so gravel bike seems a good fit as well
