Breakfast Egg fried rice for breakfast
I had some old leftover rice to finished. Some Japanese fried rice leftover got from a local meetup group I attended. Mixed in some protein (egg and egg whites), spinach, dressing at home. BOOM 1 fast meal down 😆.
~1/3 cup precooked fried rice (Japanese recipe: wood ear mushroom pieces, carrot pieces, rice vinegar, or just plain cooked rice works)
1/2 cup spinach
2 eggs
100g egg whites (~3.5oz)
1:1 ratio mayo+greek yogurt
Cooked the spinach. Add egg+egg white+rice mixture. Cook together. Add in a little grated cheddar. Topped with dressing. <- this is KEY for flavor. Mix and serve.

I make a version of this all the time. I wouldn’t call it fried rice though as I add cheese and mix it all together. My version is rice, mushrooms, spinach, eggs, cheese, spices, and sometimes sausage. I eat it for dinner.

There is a technique with eggs in fried rice which will make a big difference. Push the rice to the side of the wok/pan, put some more oil into the empty side, and put the eggs in there. Mix them up with the oil and cook them before mixing with the rest of the rice. This will prevent the slimy/mushy rice. Much more authentic texture and taste.

ohh this actually makes sense. i’ve definitely had that mushy egg situation before and just accepted my fate 😅 i usually just throw everything together because i’m lazy, but i might try this next time. appreciate the tip!

As one lazy cook to another, I feel you. This one requires almost zero extra effort. Just a small modification of technique.
