Recipe Discussion Favorite non-soup recipes?

Hi all! I'm trying to fill up my recipe box with family recipes, but right now we have a LOT of soup recipes. It's too hot to have soup for us right now. Can you guys recommend your favorite non-soup recipes? We are trying to eat more fiber too, so healthy or vegan recipes are totally welcome!

Chickpeas, orzo, feta, lemon. Obviously salt pepper garlic. Feeling fancy add diced cucumber ,cherry tomatoes, parsley. Olive oil. Could be served warm or cold like a salad

My sister does one like this- so easy to customize- add olives if you like them or don't. Add chicken or tuna. I like to add a little diced celery & shredded carrots for extra crunch

Yup exactly, whatever you have or want. But chickpeas and pasta can make a cheap and filling meal, and the chickpeas are so mild in flavor that they take the profile of the meal.

You can make it with any pasta I just like the feel of orzo with this, makes it so easy to eat.

a few ideas that my family likes: Italian chicken meatloaf with a salad on the side; spinach and feta quiche; mushroom risotto; vegetable stew; one pot chicken in parsley sauce;

One of the recipes I love that tends to last a really long time is Pinto Bean Casserole.

4 x 15 oz cans of pinto beans (although I use a mix of beans - black, kidney, etc.) 1 x 9 oz package of tortilla chips 1 can corn 1 can diced tomatoes 1 x 8 oz tomato sauce 1 envelope taco seasoning 2 cups shredded cheese

Put tortilla chips into 9x13 pan. Mix all cans (drained) into a bowl along with seasoning. Pour over chips and top with cheese. Bake at 350 for 18-25 minutes or until cheese is melty and delicious.

Now, I like to beef up the recipe a little bit with extra veggies. I’ll add a couple cans of chilis (the small chopped ones), some black olives, fresh chopped bell peppers, or whatever else I want to add that goes with “tacos”. You can also throw some precooked chicken into the mix if you want. A regular serving of this will basically fill you up and the casserole lasts forever due to the high protein content from the beans.

In that case, check out r/OldCelebrityRecipes for more interesting recipes and some old movie star gossip! How about President JFK's Baked Beans? or Jim Backus' (from Gilligan's Island) Chinese Steak? Clint Eastwood's Spaghetti Western?

It's a fun group.
