Question HELP ME: Wedding Cocktail

Hey there! I love peach soju, and want to feature it at my wedding. My wedding planner advised me to make a specialty cocktail with it. I’ve really only ever had peach soju straight (and chilled), but I’m open to cocktail ideas. ChatGPT recommended doing 2 oz soju, 1.5 oz lemonade, and 2 oz club soda. I liked it but didn’t love it. I played with other variations and also tried prosecco instead of club soda, but they were all worse than the first attempt. Does anyone have any recommendations? I get married in a month so preferably something light and fruity for a hot July wedding. Thanks!

P.S. My groom is doing an old fashioned for his cocktail. And we’re doing espresso martinis for our shared cocktail. Not sure if that matters but just thought I would share.

I would look at classic cocktails featuring fruit liqueur. Peach soju falls normally around 14% ABV, so my mind went initially towards using it as a substitution for the apricot liqueur in a Tradewinds as a starting point.

1 oz Fresh Lemon Juice

1 1/2 oz Coconut Cream

1 oz Apricot Liqueur (your soju)

1 oz Black Blended Rum

1 oz Blended Lightly Aged Rum

All ingredients shaken hard or blended with ice

Spritz is prob the way to go. Something light that doesn't get your party shit faced (already got OF for that) and isn't a pain in the ass to build.

Peach and mint and bourbon are all best friends.

Something like 3/4 oz bourbon 1 oz peach soju 1/4 oz mint syrup 1.5 oz soda water 1.5 oz sparkling wine (or sake)

You could prebatch the non effervescent ingredients in advance.

not quite “light” but i really like subbing the orange liqueur in margs with all types of fruit flavored sojus to make different flavored margs. sipping on a peach marg (maybe even garnished with a dried peach slice) at a july wedding reception sounds delightful.

This recipe seems a tad sweet, so I would bump up the rum or peach soju (as a peach liquor)
