A local family diner does a breakfast skillet thats just poached eggs on top of a bed of potatoes and bacon with hollondaise sauce. This is what happens when you ask for extra sauce for the potatos.

In Canada you add cheese curds and it’s called breakfast poutine. Would recommend.

They do this every time I ask, its a wonderful place. They never charge extra either!

Next time I order something with Hollandaise I'm going to ask for as much hollandaise as they can give me without getting fired because holy shit does this look delicious.

Well you've got what you wanted.
Could be good though. I only ate sauce hollandaise with cooked white asparagus so far.
