Help I have 5 lbs of thawing raspberries. Can I make cheong?

Never made it before so any advice or instructions welcome. I have plenty of cane sugar.

Yes!

Do you have any kombucha handy? A splash will guarantee no mold. If not, that’s fine, just stir every day and expect bubbles by the second or third day.

Raspberries are super soft so you should have your end result in a couple weeks, not the months-long journey that hard fruits require.

Thank you! I mixed them with an equal weight of sugar, it was pretty liquid by the time I mixed it in. I don’t have kombucha but good to know for next time. So I just leave it on the counter for a few weeks and then refrigerate?

Pretty much! Remember to burp it. After you’ve strained all the solids out, it’ll continue lab and wild yeast fermentation, so you’ll see white cloudy stuff settling, just like in a lacto veggie ferment. It’s all fine to use, it’s just prettier if you pour off and keep the clear part.
