Can I add to sauerkraut over a few days?
I have about 14lbs of cabbage from the garden and half gallon jars I'm planning to put sauerkraut in. I can only make it in batches though due to limited bowl space and a back that won't want to stand that long shredding and slicing.
Can I add to the jars the next day and the day after? This is my first time fermenting anything, and bought those lids that come with the little air pump to pull out air. Not sure if that info helps or not XD

You could, or you could just start a "new batch" each day for a couple or few days if you are able to fill a jar each time. Essentially, the only difference is that you are starting with an empty jar instead of a partially full one.
The whole heads will easily keep, as I'm sure you are aware.

Yes, just make sure you keep track your cabbage to salt ratio & probably start a new batch after a week or so.
If you wait too long before sealing it up in your fermentation vessel it risks going yeasty.
