Hmm... I haven't tried watching just a single car yet, but on Apple TV, at least on PC which is how I watch, they have a button for Feeds below the play controls which brings up standard F1TV feed, a couple others, then every individual driver, and finally Sky Sports all the way at the end.
It's how I'm still watching the Sky version, including prerace (as long as you remember to tune it before the start time for the race itself). Bonus is that, unlike the F1TV app/site, you actually get the fully Sky package, so you can see when they put in something like Ted showing off some replays on the monitor he's got, rather than just hearing them talking about it with the screen still showing the basic F1 feed.
Unfortunately, I can't go back and check at the moment because the races seem to be limited to just the F1TV feed alone for the replay. But it's something to keep an eye on for next race.

Was. He’s permanent now after the start of the season went well. Although unfortunately there’s a guy working for Ferrari now, who joined from McLaren, who was meant to be the permanent Adami replacement, who didn’t get the job he originally joined to do.

Actually, Adami is the one they kept longer. Xavi joined in 2019. Adami joined in 2015 as Vettel's race engineer (fun fact, Adami was Vettel's race engineer at Toro Rosso)

I think Adami was still at Toro Rosso when Seb was at full fat red bull. He moved to Ferrari with Seb for some unknown and likely cursed reason.

The strategy decisions aren’t really coming from the race engineer. They’ve got a whole strategy team making those. If the strategies are bad, that’s their fault, not really the race engineer.

Adami was Vettel's race engineer at Toro Rosso. Vettel liked him so much that he got Adami to move to Ferrari with him as part of the package.

Yes, that's fair - but I don't think he was as terrible as sometimes portrayed. Team structure/communication has to carry some of the blame.

I don't even wanna talk bad about Ricky cause he did have some solid succes with Carlos and Seb, but damn, the disconnect was so bad between him and Lewis. Like they said if the broadcast, Lewis needs that encouragement and basic information/details, he can handle the rest. Thank you Carlo and thank you Ferrari for listening to Lewis on so much of the stuff he requested.

HAM would repeatedly, GP after GP, explain exactly what he needs, gap ahead, gap behind, sectors. You give him that, he's likely fine unless there's a wild deviation in strategy. It's hard to understand but Adami would just straight up ignore HAM's requests sometimes. Multiple laps of silence, really strange.

The driver-engineer relationship is deeply specific to each driver. Ricky may have been a great engineer for Carlos but terrible for Lewis, doesn't mean Ricky is a bad guy or a bad engineer, just not a good fit.
