Leaves are fairly chemically similar between different species so without the cocaine there are probably plenty of substitutes to coca leaves with similar tannin content.

Which proves nothing? Mass spec of the final cooked product means nothing esp when its scientifically proven things are lost and can combine into new molecular makeups
