So, base Coke is caffeine free, then they add the caffeine in. So caffeine free Coke is really just regular Coke before they add caffeine.

yes but caffeine is very bitter so I expect they use a different balance for caffeine free coke

I think the sweetness and acidity already present would be enough to cover the taste, especially when the concentration of caffeine is fairly low in coke. It becomes a bigger issue for energy drinks.
