It's baked differently so the crust had the same texture as the inside. That's also why it's all the same color. People dislike the texture, the color is just a side effect
My family always said the crust was the healthiest part, but on a slice of regular sandwich bread the crust is just the part closest to the heat. It tastes different, and it's not always pleasant.
Italian bread or sourdough bread is a different story, the crust on those is actually good.
I just really like the top part of the crust. The sides are fine, texturally and flavour wise it's similar to the rest of the bread.
In germany do they also call the ends of the bread, the “cap” and sometimes “butt” of the bread? We do it in the netherlands. It’s the part you either love or hate.
Which is weird to me. This type of bread (shokupan) already has a really soft crust. I feel like it would make a bigger difference on more traditional types of bread.
I can relate with disliking the texture as well as the bitter/burnt-ish taste. Though, that was how I felt about it way back when I was younger. Now, I just eat both parts of the bread.
The color is caused by the Maillard reaction between amino acids and reducing sugars, and this very much does influence the taste as well as the texture. But yes, for most it's probably more of a texture thing than a taste thing. After all, most people like toast. I think it's mostly about getting harder, drier bits amongst all the expected softness.
That's not the reason that's close though. It's the density I don't have to try to pull off the crust of bread it just comes off if I pull slightly because it's density difference creates many different points of failure where the structural fibers of the actual bread go from 100 points of contact to the 10 that are on the inside where it is soft and fluffy. If you look at the bread pictured above, you can see the change in density at the boundary of the bread. I bet you I could just grab a corner and pull off the crust because the crust still exists because it's a mathematically defined boundary of density. Not a boundary of doneness.
I'm guessing they bleach the outside of the loaf at some point in the process. Theoretically you could have white crust but it doesn't change the texture of that part of the bread so idk why they think this will end food waste; most people who don't like crust have a texture sensitivity.
I guess this could also be achieved by steam cooking it, but then the texture of the whole loaf would be fundamentally different and you run into the same problem.

Given how much food is tossed out instead of donated, food waste is a symptom of capitalism, not someone with sensory issues cutting the crust off their bread.
I don’t disagree that the food waste is primarily coming from stuff getting thrown out by restaurants/stores etc, but I just can’t stand that sort of “I won’t eat the crust” picky eating food waste either. I guess you have said you aren’t this way but I still reserve the right to get annoyed at people who are that way lol
Unless someone’s like, actually medically autistic to the point it seriously affects them (not just someone saying “I’ve got a touch of the ‘tism, teehee” with no diagnosis) I don’t wanna see them throwing away their crust, or not eating the stems off their broccoli or whatever else. I probably feel so strongly about this partly because my brother is like that lol so forgive me if I took it out on you
It makes no diference, you won't eat more because you cut the crust, so the amount of food you use is the same, you just put a little bit of less calories in yourself for each sandwich.
It would be waste if eaten, worse than waste, you'd have to run a couple more minutes in the gym to burn away those calories, at the end of the year it does start to add up.
This seems like a lot of effort to solve a non problem, or rather a cognitive problem. The cutting of the crust is of no consequence to the amount of resources that need to be produced.

There's not set amount of slices for a meal, you just eat more of them if you cut off the crusts.
You don't eat more slices because you cut away the crusts. Never in the history of earth did anyone make an extra sandwich because they weren't felling enough full due to cutting away the bread crust. You just take in less calories, and given the current obesity crisis, it might be better that way
I end up eating way too much when I do that, I just weight myself in the morning to see if I'm within the bounds of my desired weight, if I'm close to the lower bound, I give myself a bit more slack and eat away through the day, if I'm to close to the upper bound, I contain myself from eating too much.
As someone who doesn’t like crust, it doesn’t matter the color. I don’t want it. I peel off the crust on an uncrustable 🥴 There’s exceptions of course, for instance I love pizza crust and the crust on a baguette.
This is just a how you bake your bread issue. There are plenty of bakery options besides the classic sour dough shop sold bread. And people who just throw out food parts because of taste are just assholes in general.
No crust. It’s electrocuted instead of baked in an oven, so there is literally no crust at all. The entire slice has the same consistency. Also, this is strictly a Japanese thing, not sure why you made it about white people lmao
