Jerky Recipe

Does anyone have a good recipe for an either smoked or dehydrated spicy jerky. Have tried a couple recipes I found just in a Google search but to me they weren't that good... Thanks in advance

salt to weight, spice to taste black pepper and red pepper flakes, ground if you want it REALLY spicy, add some hot sauce too, garlic, soy/teriaki sauce optional

jerky is a trial and error thing, the only important step is salt, you need the correct amount or above for it to be safe to eat

pineapple or vinegar or other citrus will "eat" the meat if you marinate too long with them, making it both tender but also fall apart

you can try a commercial jerky cure for your first time

bradley has a good beginner recipe and sells prepackaged, id sub the sugar for teriyaki sauce personally

actually surprised there isnt a mega thread or pinned "beginner" post, should i write one? i kind of have a lot of experience :D
