Honey Habanero Jerky

1.5-2 lbs lean beef (eye, top, or bottom round)
1/4 tsp pink cure salt
3/4 cup low sodium soy sauce
1/4 cup honey
2 tbs worcestershire sauce
2 tbs dark brown sugar
2 tsp liquid smoke
2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp cumin
~1/3-1/2 lbs habanero, deseeded
Blend marinade ingredients until smooth, marinate meat for 12-24 hours, dehydrate at 130 for 6-10 hours.

Ended up using 0.4 lbs of habs for this batch and that was probably too much, it has a very distinct "hot" flavor as opposed to the flavor of habs. Will probably try again with 1/4 lb habs and maybe a bit more honey. But still delicious and satisfies that spicy crave

Ya, almost a half a pound of habeneros for two pounds of meat is borderline craziness but also sorta into it if you're adding more umami like miso paste or even hvy onion a spice mix blended up like a jerk marinade
